Burdock
burdock plant

Arctium lappa -Biennial - Culinary, Medicinal   (Also known as Gobo, Lappa, Fox's Clote, Thorny Burr, Beggar's Buttons, Cockle Buttons, Love leaves, Philanthropium, Personata, Happy Major, Clot-Bur )

Growing wild in most of North America, first year roots of this imposing plant are said to possess blood purifying properties.   The leaves are used in polticies to relieve bruises and swellings and tumors.  Seeds are used for skin softening.   The stalks can be harvested while still young, boiled and eaten like asparagus, eaten raw in salads or candied, like angelica.  The plant has a tall central stalk surrounded by leaves resembling huge elephant ears or rhubarb.  The stalks can achieve 9-10ft. in the second year and are dotted with round heads of purple flowers that mature into 1in. burrs.  The stalks can be harvested while still young, boiled and eaten like asparagus, eaten raw in salads or candied, like angelica.  Can be invasive without control.  The plant prefers a well drained soil in full sun.
